The hotel cost is likely to be way lower than a detention centre given they don't have to pay to staff it, power it, provide catering etc. An average prisoner costs £35k a year to keep in jail. Crossing this year have doubled 2019 tally already.
Two Australian warships blocked a boat loaded with illegal immigrants that did not respond to requests for a halt in their waters.
The illegal immigrants all returned back, the crew members were arrested and the boat was dismantled for scrap.

The Australians also detain immigrants in inhumane conditions in internment camps in Solomon islands etc. Not a national policy to look up to.

Because it is illegal under international law. Australia just chooses to ignore it, until recently.
There is a principle called 'non-refoulement' in the '51 Reguee Convention that, as I understand it, means signatories of the treaty agree not to turn back reguees which they call non-refoulement.
The UK could intercept boats in the channel but how they would then push the into French waters would likely cause an international incident between France and the UK. I'd imagine that would put at risk the corporation between the UK and France at the borders, we wouldn't want France just waving through folks.
