Boxes of 6 eggs of mixed sizes, when did this nonsense start.

Trying to find two eggs the same size to boil now requires measuring devices so you can find two roughly the same size.

Boxes of eggs came in either medium, large or extra large and this should be reinstated immediately. Or, we could look at the box beforehand and buy the correct ones. But that is not the point.

Did you know that putting eggs in the fridge weakens the yolks, and thats why the yolk splits much more often with cold eggs than room temperature eggs when cracking them into a pan?

Why is it becoming more difficult to get the shell off a boiled egg?
Years ago you cracked the shell, peeled away and you got your perfectly formed, peeled egg. Nowadays you pick at the shell and chunks of egg come away with it.

Roll it with your palm across a chopping board it'll split and you'll be able to take the shell off in one go.

When you take the egg out of the boiling water, crack the shell, not too much, then stick it in cold water, running or still.
When it's cool the shell should come away very easily.

Always put it in ice water straight away.

That blue line around the yolk is from not cooling the egg.
