The Otis Redding record was male triumphalism, at its 60s worst, demanding respect just because he was a man. The Aretha version, the single, was a woman saying "Oi, come on! You expect a meal to be ready when I've been looking after several small children. I've not been sitting around all day eating biscuits!" Admittedly, that doesn't come across too well on the live version you posted, but it's obvious on the 45, as they used to be called.

What I wanted was new versions of old songs that made you interpret the LYRICS in a surprising way.
Still, once you post a topic it's out of your hands, and maybe there just aren't as many remakes that do that as I asssumed.
